I've had the benefit of owning and modding a few Z8's, so I thought I'd do a simple shopping list of modifications I've made to my 'driving car' with links. I've put them in what I feel is their order of importance and value. I don't consider the Performance Package an upgrade, more an essential that every car should have, so I haven't listed it as an upgrade.
Meisterschaft exhaust
Meisterschaft makes three exhausts for the Z8, the SP which is silent, the HP which is pretty quiet, but a whisper louder than stock and the wildly loud GT (http://www.bmwz8.us/vbb/showthread.php?t=1520) which turns a spin around the block into a deliciously naughty sonic assault on the 'hood. This upgrade really changes how you feel driving the car, but it doesn't change the car itself!
Swaybar & Suspension.
Dinan swaybar (http://www.bmwz8.us/vbb/showthread.php?t=98&referrerid=2) and Castor plates (http://www.bmwz8.us/vbb/showthread.php?t=149) mated to the EU spec Alpina suspension (http://www.bmwz8.us/vbb/showthread.php?t=735) provide the best upgrade of all IMHO. The car rides more comfortably and handles much better.
(NB: The Dinan sway bars are no longer available, but H&R makes a set of stiffer, stronger bars that will work well.)
Wheels & Tires
The 20" rims and Pirelli P Zero (http://www.bmwz8.us/vbb/showthread.php?t=253) tires are simply superb on the car when done with the upgrades above. Also the new Michelin Pilot Super Sport tires are getting rave reviews.
Brembo brakes
The brake kit (http://www.bmwz8.us/vbb/showthread.php?t=872) was a vanity upgrade, but these brakes really feel and work much better than stock.
Steering bushings
Powerflex Urethane bushings go a long way to eliminating the steering wheel shimmy (http://www.bmwz8.us/vbb/showthread.php?t=1425) that some cars are prone to, making the steering feel crisper and more accurate in your hands.
European side mirrors
This is a little upgrade (http://www.bmwz8.us/vbb/showthread.php?t=272) that I just love every time I get in the car, you can really see what is going on all around you.
Dinan chip
This upgrade (http://www.bmwz8.us/vbb/showthread.php?t=5) makes a noticeable difference to how the car feels by cleaning up the throttle response in the mid range.
Ultimate Pedals
This upgrade (http://www.bmwz8.us/vbb/showthread.php?t=553) is for those who like to heel/toe. The stock pedals are placed way too far apart, resulting in awkward foot twisting and missed shifts, with the wider gas pedal downshifts are telepathic.
Clutch Delay Valve
A little upgrade (http://www.bmwz8.us/vbb/showthread.php?t=133) that makes a big difference to the feel of the shifting.
UUC short shift kit & steel weighted gear knob
A crisper and cleaner shift (http://www.bmwz8.us/vbb/showthread.php?t=20) with a nice polished metal knob.
Quaife LSD
When the Z8 was new there was much ado about it not having an LSD. Many of us fitted the Quaife (http://www.bmwz8.us/vbb/showthread.php?t=191) unit. Everyone but me loved this upgrade, I never noticed any difference to the driving experience!
Valentine One
I've hard-wired my V1 (http://www.bmwz8.us/vbb/showthread.php?t=7) to the drivers side sun visor, which is where I clip my unit when I'm driving. Living here in CA and loving the fast back roads that criss-cross the vast open and empty parts of the south-west, this upgrade won't make your car any faster, but it will keep you out of jail while enjoying what your car can do!
